Injection ingredients:
apple cider vinegar 1 cup.
worcestershire sauce 2 tablespoons.
Lime juice 1 lime.
tabasco sauce 1 teaspoon.
Salt 3 tablespoons.
All purpose barbecue rub 1tablespoon.
How To:
Score the skin of the pork leg.
Mix the ingredients for the injection fluid and inject all of it in the leg..
Apply the barbecue rub on to the exposed meat. Apply a lot of salt on the skin of the pork leg..
Start up your barbecue and set it to roast at 200 Celsius or 400 Fahrenheit..
Place the pork leg over indirect heat on your barbecue..
When the skin is starting to cirspen up, brush of the sal from the skin..
Keep the temperature up by adding charcoal if needed..
At a minimum of a 68 Celsius 154 Fahrenheit and a crispy skin the pork leg is done..
Let the pork leg rest for 30 minutes..

INGREDIENTS.
1 14-pound LEG OF PORK.
2 ONIONS.
1 cup of DIJON MUSTARD.
1.5 cups of ORANGE JUICE.
½ cup of SCALLIONS.
½ cup of PARSLEY.
4 THYME sprays.
2 tablespoons of GARLIC PASTE.
4 ROSEMARY sprigs.
3 tablespoons of CABERNET SALT.
3 tablespoons of grated GINGER.
2 tablespoons of fresh PEPPERCORNS.
or 2 tablespoons of pepper.
DIRECTIONS:
Start by making a few cross cuts on the skin without exceeding the meat..
Cut 2 onions into pieces and place them on the base of the pan with the pork..
In a cup place and mix: 2 fresh PEPPERCORNS, 3 teaspoons of CABERNET SALT, 1 cup of DIJON MUSTARD, 1 tablespoon of GARLIC PASTE, ½ cup of fresh SCALLIONS, ½ cup of PARSLEY, 3 THYME spikes, 1 sprig of ROSEMARY.
Mix all the ingredients except the GINGER..
Rub/spread the mixture on the pork especially in the cuts, on the sides and underneath. Then add to the pork 2 pieces of GINGER PASTE chopped in a processor..
Marinate the pork in the fridge overnight..
The next day place 1 cup of ORANGE JUICE in the baking dish, add the ONION and the PORK LEG. Let stand 3 to 4 hours while it reaches room temperature..
In a convection oven, cook at 300 degrees for 8 hours..
HACK/TIP: To know when it is ready, place a kitchen thermometer and when it says 160 degrees it will be perfectly cooked..
Remove from oven, cover with aluminum foil and let stand for 45 minutes. Pour the sauce from the pan on the pork and on the meat when serving..

Roasting Traditional Pork Leg. 1. Preheat your oven to 465 °F (241 °C). Electric ovens take between 10 to 15 minutes to preheat, while gas ovens take about 5 to 10 minutes.

Roast for 15 minutes, then lower heat to 375 degrees F and continue roasting until the meat thermometer reads 145 degrees F.Rember that the pork roast will continue to cook internally by and the temperature will increase by about 10 degrees after it’s been removed from the oven.
How do I shred pulled pork? When the roast is cool enough to handle (but still hot) begin the process of pulling the meat.Bake Place pork steaks in an ovenproof dish and heat the oven to 350 F. Pour any kind of prepared sauce, such as barbecue sauce or sweet and sour sauce, over the steaks. Cook the steaks in the oven for an hour while you prepare the rest of your meal. The steaks are done with the internal temperature of the meat reaches at least 145 F.
Refrigerate pork, uncovered, for at least 12 hours and up to 2 days. Let stand at room temperature for 1 hour before cooking. Preheat oven to 250C (230C fan-forced).
Rub salt into scored rind. Season cut side of pork with salt and place pork on a rack set in a roasting pan. Roast pork for 30 mins or until rind is crisp and golden.
Put the roast in your preheated oven, and baste with the marinade, as well as the cooking juices that will be released into the pan during the roasting time. If possible, turn the roast once. Roast 15 minutes per pound, or until the meat.
